Do you cook in the microwave?
This is how my husband taught me
to make scrambled eggs in the microwave. (Yes, I’ll admit it. My Eagle Scout-Be
Prepared husband taught me to cook. Maybe sometime I’ll share how to make bacon and eggs in a paper sack over a campfire.)
Spray the microwave safe dish
with cooking spray to prevent sticking. Alternatively, my husband likes to save
bacon grease, and he’ll rub a bit of it around the bottom of the dish. I think
I can feel my arteries clogging….
Use a fork to beat the eggs slightly
in the microwave dish. (Please excuse the simplistic directions if you already
know all this. I needed these instructions not too long ago.)
Add milk and stir. Milk helps to stretch the eggs and makes them fluffier. It also gives them a more appetizing color.
Salt, if desired.
Microwave for one-minute
intervals, stirring each time. (Actually, it’s more like scraping it off the edges of the dish and breaking up egg chunks
with a fork. But you’re smart. You’ll figure it out.)
Alternatively, don’t stir in
between and you’ll have a solid scrambled egg perfect for putting on an English
muffin or biscuit. Add a slice of cheese and a breakfast sausage patty and you have a
homemade Egg McMuffin.
Four eggs took 3 minutes and 30
seconds in my microwave.

They look really good. I haven't used my microwave since January. I make mine on a griddle. We have just chosen not to use ours. I haven't even missed it at all.
